What does jikabaisen mean?
A traveller's guide to in-house roasting in Japan

If you're travelling Japan and you want a café that roasts its own beans on the premises, there's one word to look out for. You'll see it on signs, on bean packets, and in café names across the country. It's jikabaisen (自家焙煎) — and it tells you something quietly important about the cup you're about to drink.

The word, broken down

ji-ka-bai-sen · 自家焙煎

The four characters break down like this:

  • 自 (ji) — self, own
  • 家 (ka) — house, place
  • 焙 (bai) — to roast over heat
  • 煎 (sen) — to roast / to dry-fry

Put together: "roasting at one's own place." A café with a roaster on the premises, doing its own roasting, rather than buying beans that have been roasted somewhere else. The closest English equivalent is "in-house roasting" or "house-roasted coffee."

Why it matters

Most cafés in Japan — and most cafés anywhere — buy beans that are already roasted, from a wholesaler or a separate roastery. There's nothing wrong with that. But a café that roasts its own beans has something different going on: the freshness is right there (you can sometimes smell it), the cafe owner has been involved at every step, and the beans haven't sat in a warehouse for weeks before reaching your cup.

It's the difference between cooking from scratch and reheating a ready meal. Both can be good. One has more of a person's hands in it.

How to spot a jikabaisen café in the wild

Three quick tells:

  • The kanji on the door or sign — 自家焙煎 or sometimes 自家焙煎珈琲 (with 珈琲, the older characters for coffee).
  • An actual roaster visible inside the café. A drum, often gas-powered, sometimes with a chimney venting outside. If you can see it from the counter, that's the giveaway.
  • Bean packets sold at the counter with the café's own name on them. If the café is selling its own labelled beans, it's almost certainly the one that roasted them.

Bonus tell: a café that talks about "single origin" (シングルオリジン) or names its blends after specific origins is far more likely to be roasting in-house than one that just says "blend coffee."

Why it's rare

Roasting takes space, equipment, ventilation, expertise, and a lot of time. A small drum roaster costs more than most café espresso machines. Learning to roast well takes years. Most café owners don't want to take that on — they'd rather perfect the brewing and let a specialist roastery handle the beans. Which is fair. But it means a jikabaisen café is genuinely rarer than the average specialty coffee shop.

2013年の10月、お店の隅に1kgの焙煎機をひとつ置いて、ロースターコースターを始めました。あれから13年。焙煎機は少しだけ大きくなりましたが、ドラムの前に立つ人と、一釜ずつ手で焼くやり方は変わっていません。きょうは、その13年で考えてきたこと、いまも考えていることを、すこしだけ。

「自家焙煎」と一口にいっても

同じ「自家焙煎」と看板を出しているお店でも、やっていることはずいぶんちがいます。豆をどう選ぶか、どんな焙煎機で、どのプロファイルで、どこまで攻めるか、どこで止めるか。「自家焙煎」という三文字のなかには、お店の数だけのちがいが入っています。だから自家焙煎であること自体は、きっとそこまで重要ではない。大事なのは、その向こう側 ── どんな考えで、どう焼いているか、なのだと思います。

機械より、五感を信じる

最近の焙煎機はすごい。プロファイルを記録して、再現して、データをグラフで見られて、AIっぽいものまで載っているらしい。それはそれで素晴らしいことだと思います。でも、私たちの13年は、あえて言えばその逆方向に振れていきました。香り。豆がドラムの中でこすれる音。色が変わっていく速度。「ハゼ」が来る前の、ぴんと張った空気。── 数字よりも、そういう手がかりを信頼するようになりました。

毎回、生豆の状態が違います。同じ農園、同じロットでも、保管期間が変わると焙煎中の挙動も変わる。だから「前回と同じプロファイルを再生」ではなくて、その日のその豆と会話するように焼いていく。そのほうが、安定もする、というのが13年やってみての実感です。

賞でもスコアでもなく、もう一杯

コーヒーの世界には立派な賞があります。スコアも数字も大事です。けれども、ドラムの前で目指しているのは、ちょっとちがう景色です。それは、お店で一杯飲んでくれた方が、「もう一杯ください」とおっしゃってくれる ── その瞬間。トロフィーは家に持って帰れますが、「もう一杯」は、目の前のカウンターで起きます。私たちは後者のほうが好きで、いまもそちらを追いかけています。

13年やってきて、見えてきたこと

つくり手の手数が、味にちゃんと出るということ。焙煎機の前に立つ時間と、その日のお客さまの一杯のあいだには、ちゃんと細い糸が繋がっているということ。ものすごい設備や、ものすごいスコアの豆を使わなくても、ふつうの豆をふつうにいい状態に整えるだけで、ふつうの一杯がぐんとよくなるということ。── ぜんぶ、地味な学びです。でも、続けてこられたのは、こういう地味な発見の積み重ねがあったからだと思います。

そして、つぎの一章へ

2026年から、いつもの仕事に加えて、スペシャルティ・グレードの豆の焙煎もはじめました。同じドラム、同じ手、同じ「もう一杯」を追いかける気持ちのままで、表現できる幅をすこしだけ広げています。これもまた、13年の続きです。
