On 8 October 2013, Roaster Coaster opened as Higashikawa's first roast-in-house café. Fresh Coffee · Craft Beer · Good Life — that has been the idea from day one. Two brands grew from this little café.

The beginning was simple. One small 1 kg roaster, one counter, and one conviction: coffee tastes better when it's roasted where it's brewed. We wanted a place where you could drop in for a cup, take some beans home, and sit for an unhurried hour. The founder is from Yorkshire, England. He says Higashikawa's landscape and clean water reminded him of home.

What does "roast-in-house" mean?

It means we roast our own coffee beans right here in the café. Most cafés buy beans that have already been roasted elsewhere. A café with its own roaster on site, doing the roasting themselves, is rarer than you might think.

Because we roast ourselves, we control everything — which green beans to buy, how dark to take them, how to handle each new lot. Your cup has passed through our hands at every stage, from raw bean to finished drink. It's the difference between cooking from scratch and reheating a ready meal.

2013 — TAISETSU COFFEE

The beans we roasted in the corner of the café needed a name. Higashikawa sits at the base of the Taisetsu mountains — 大雪, which can be read "Taisetsu." The same sound in Japanese also means "precious" (大切, taisetsu). One word, two meanings: the mountains and what matters. That became TAISETSU COFFEE.

Craft coffee — by hand, not by machine.

Thirteen years on, the way we roast hasn't really changed. We watch the colour, listen for the crack, and follow our nose — trusting our senses and judgement over numbers, one batch at a time. We'd rather hear "another cup, please" than chase scores and trophies. Love, flavour, and feel over accolades. That's what craft coffee means to us. Every batch gets our full attention, so you can taste that a person made it.

From the counter to all 47 prefectures.

What started at the counter now reaches every corner of Japan — all 47 prefectures. Our photo drip-pack series, featuring wildlife photography from Hokkaido, is stocked in over 60 shops across Hokkaido and Honshu. Same room, same hands, same little roaster.

2026 — A new chapter: speciality coffee.

This year we're starting something new. Alongside everything we've always done, we've begun roasting speciality-grade coffee — beans scoring 80 or above on the SCA scale, with the clarity and complexity that let craft roasting really shine. Same room, same hands, same love for every cup — just a wider canvas.

2020 — Craft Bear

"Fresh Coffee · Craft Beer · Good Life" — the second half of that picture came to life in 2020. Craft Bear is Higashikawa's first craft beer brand.

Our flagship, Higashikawa Ale, is brewed to our original recipe. The brewing water is Taisetsu Asahidake spring water, selected as one of Japan's outstanding natural water sources — we drive out and collect it ourselves, one tonne at a time, then deliver it to a trusted brewery. A session IPA at 4.5%, with citrus and tropical notes and a lightness that keeps you reaching for another.

Alongside it: Northern Breeze, an authentic German-style Hefeweizen (5%, banana and clove from the yeast, a pillowy white head), and the gold-medal-winning Black Rock Island, a Doppelbock (8%, toast, caramel, dark fruit, and a whisper of chocolate). Both are brewed with locally processed ingredients from Higashikawa — Hokkaido in every sip.

You can get all three right here at the café and at the Higashikawa Michi-no-Eki — the only two places that stock the full lineup. Higashikawa Ale, our flagship, is also carried by a handful of bars, izakayas, and hotels around town. The taps come on at the café from time to time, when we have an event.

Still here, in this little café

Two brands, hundreds of stockists, deliveries across the country — yet the centre of it all is still the same small café, the same roaster, the same town. If you're ever in Higashikawa, drop in. A cup of coffee, a glass of beer — that's all it takes for an afternoon to fall into place.

2013年10月8日、ロースターコースターは東川町ではじめての自家焙煎(じかばいせん)コーヒー店としてオープンしました。Fresh Coffee · Craft Beer · Good Life ― その日からの想いです。この小さなカフェから、ふたつのブランドが育ちました。

はじまりはシンプルでした。1kgの小さな焙煎機がひとつ、カウンターがひとつ、そして「コーヒーは淹れる場所のすぐそばで焼くと、もっと美味しい」という思いがひとつ。立ち寄って一杯を飲み、豆を持ち帰り、一時間だけゆっくりできる場所をつくりたかったのです。創業者は英国ヨークシャー生まれ。東川の風景と澄んだ水が、ふるさとを思い起こさせたそうです。

「自家焙煎(じかばいせん)」とは?

自家焙煎(じかばいせん)とは、お店の中でコーヒー豆を自分たちで焼いている、ということ。多くのカフェは、すでに焙煎された豆を仕入れて使います。お店のなかに焙煎機があって、自分たちで焙煎しているカフェは、実はそう多くありません。

自分たちで焼くからこそ、生豆の選び方から、焙煎の度合い、入荷したばかりの豆をどう扱うかまで、すべてを自分たちで決められます。あなたの一杯は、生豆からカップまで、すべて私たちの手のあいだを通っています。出来合いの料理を温め直すのではなく、はじめから自分でつくる ── そのちがいです。

2013年〜 — タイセツコーヒー

店の隅で焼いた豆に、名前が必要になりました。東川町は大雪山(だいせつざん)のふもとに広がる町。「大雪」と書いて「だいせつ/たいせつ」。同じ音をもつ言葉に「大切(たいせつ)」があります。このふたつの意味を重ねたのが、タイセツコーヒーです。山と、こころ。場所と、想い。一杯のなかに、両方をこめて。

機械ではなく、人の手で。クラフト・コーヒー。

13年が経っても、私たちの焙煎の流儀は大きく変わっていません。香り、音、豆の色の変化 ── 数字よりも、五感と判断を信じて、ひと釜ずつ手で焼いていきます。賞やスコアを追いかけるよりも、「もう一杯ください」と言ってもらえる一杯を。トロフィーではなく、愛とおいしさ、そして感覚。それが私たちにとっての「クラフト・コーヒー」です。人がつくったとわかる味になるように、ひと釜ひと釜にこころを注いでいます。

カウンターから、47都道府県へ。

カウンターからはじまったタイセツコーヒーは、いまや日本全国47都道府県へお届けするまでに。北海道の野生動物の写真をあしらった「フォトドリップパック」シリーズは、北海道と本州の60を超えるお店に並んでいます。同じカフェ、同じ手、同じ小さな焙煎機から。

2026年、新たな一章 ── スペシャルティ・コーヒー。

今年から、新しいチャレンジを始めます。これまでの取り組みに加え、スペシャルティ・グレードのコーヒーの焙煎を始めました。スペシャルティ・コーヒーはSCAの基準で80点以上と評価された豆 ── 透明感と複雑さを兼ね備え、クラフト焙煎が真価を発揮できる素材です。同じカフェ、同じ手、同じ「一杯への愛」のままで、表現できる幅を少しずつ広げていきます。

2020年 — クラフトベア

「Fresh Coffee · Craft Beer · Good Life」── ずっと描いていた絵の、後半がはじまったのが2020年。クラフトベアは、東川町で生まれた初のクラフトビールブランドです。

フラッグシップの 東川エール は、私たちのオリジナルレシピ。仕込み水は、平成の名水百選にも選ばれた「大雪旭岳源水」。1トンずつ自分たちで汲みに行き、信頼する醸造所へと運んで仕込んでいます。セッションIPA・4.5%、シトラスとトロピカルの香り、軽やかでもう一杯と思わせる味わいです。

その横に並ぶのが、ドイツ式小麦ビールの ノーザンブリーズ(ヘーフェヴァイツェン・5%、酵母が生むバナナとクローブの香り)と、金賞を受賞した ブラックロックアイランド(ドッペルボック・8%、トースト、キャラメル、ダークフルーツの余韻)。どちらも東川町で加工された原料を用い、北海道の風土を一口に込めた一杯です。

3種すべてを揃えているのは、このカフェと東川道の駅の2か所のみです。フラッグシップの「東川エール」は、町内のバーや居酒屋、ホテルでもお飲みいただけます。イベントの際には、店頭で樽生をお出しすることもあります。

変わらず、この小さなカフェから

ふたつのブランド、数百のお取扱店、全国へのお届け ── けれども、その中心はいまも同じカフェ、同じ焙煎機、同じ町。東川町にお越しの際は、ぜひお立ち寄りください。コーヒーを一杯、ビールを一杯、それだけで午後はうまく流れていきます。
